Kids in the Kitchen: Good Morning, Pumpkin!



It’s that time of year, celebrated across America: Pumpkin Spice Latte season! If you’re a pumpkin lover like me, enjoy making these just-right-for-Fall recipes with your li’l pumpkins!

Pumpkin Juice

Ingredients:

1 can frozen apple juice, from concentrate

2 cans of water (use juice can)

½ cup pumpkin puree

¼ cup apricot preserves

½ teaspoon vanilla extract

¼ tsp ground cinnamon

 

Directions:

Pour apple juice and water into blender. Add canned pumpkin, apricot preserves, cinnamon and vanilla. Blend on high until well-incorporated. Serve in glasses. Serves 6

 

Pumpkin Waffles

Ingredients:

1 tsp ginger, ground

1 cup pumpkin puree

3 eggs

¼ cup maple syrup

2 cups all-purpose flour

½ tsp allspice

1 tsp baking powder

½ tsp baking soda

¼ cup brown sugar

2 tsp cinnamon

½ tsp nutmeg

¼ tsp salt

3 Tbsp. butter

1⅓ cup milk

 

Directions:

  1. In a large bowl, stir together the dry ingredients. In a measuring cup, whisk the eggs, milk, maple syrup and melted butter well, then stir in the pumpkin puree.
  2. Add the wet ingredients to the dry ingredients and mix until just combined.
  3. Bake the waffles in your waffle iron according to the manufacturer’s instructions.

 

Pumpkin Smoothie

Ingredients:

1 medium banana

1 cup milk

1 cup ice

¾ cup pumpkin puree

½ cup oatmeal

½ cup vanilla

Greek yogurt

3 Tbsp. maple syrup

1½ tsp pumpkin pie spice

½ tsp cinnamon

pinch of nutmeg

 

Directions:

  1. Blend all ingredients on high until smooth (about a minute).
  2. Pour into a glass and serve!

Pumpkin puree

Apricot preserves

Banana

 

 

Refrigerated:

3 eggs

 

Frozen:

Apple juice from concentrate

Ice

Maple syrup

 

Baking & Spices:

2 cups all-purpose flour

Allspice

Baking powder

Baking soda

Brown sugar

Cinnamon

Nutmeg

Oatmeal, instant

Pumpkin pie spice

Salt

Vanilla extract

Butter

Milk

Vanilla Greek yogurt
